Ceylon vs Assam vs Darjeeling: The Grand Comparison

Three iconic black teas, three wildly different cup profiles. Here's how to choose between Ceylon, Assam, and Darjeeling.

Ceylon, Assam, and Darjeeling are three of the world's most celebrated black teas. All come from Camellia sinensis; all are grown in former British colonial territories; and all occupy completely different positions on the flavour spectrum. Here's how they compare.

Ceylon (Sri Lanka)

Ceylon tea encompasses a wide range of styles depending on region and grade, but the hallmarks are a bright, clean liquor, brisk astringency, and citrusy or floral aromatics. High-grown Nuwara Eliya teas are light and floral; Uva teas are aromatic and complex; Ruhuna teas are bold and full-bodied. Ceylon is the most versatile of the three for everyday drinking — equally good plain, with milk, or over ice.

Assam (India)

Grown in the Brahmaputra river valley at low altitudes, Assam tea is defined by its malty strength. The liquor is dark reddish-brown, the body is heavy, and there is a characteristic briskness that cuts through milk admirably. Assam is the backbone of most English Breakfast blends. It is best drunk with milk and, often, a touch of sugar.

Darjeeling (India)

Darjeeling — the "Champagne of Teas" — grows at high Himalayan altitudes and is famous for its muscatel character: a distinctive grape-like, floral quality found particularly in second-flush (summer) harvests. Lighter in body than Assam or most Ceylon teas, Darjeeling is best enjoyed without milk to appreciate its nuanced aromatics. First-flush Darjeeling (spring) is especially prized for its vegetal, light character.

Which Should You Choose?

  • Versatility and brightness: Ceylon
  • Strong, milky morning tea: Assam
  • Nuanced, sipping tea without milk: Darjeeling

For those new to single-origin teas, Ceylon is the natural starting point — broad in appeal, consistent in quality, and endlessly rewarding.
