About This Blend
This recipe leans into Ceylon spice heritage, using ingredients from the same island as the tea. The result is a blend with more floral depth than a typical North Indian chai, with warmth that lingers without overwhelming.
Ingredients (makes about 20 cups)
- 40 g Ceylon BOP black tea
- 15 cardamom pods, lightly crushed
- 8 cloves
- 2 Ceylon cinnamon sticks, broken up
- 1 tbsp black pepper, coarsely cracked
- 20 g dried ginger slices
Making the Blend
- Lightly crush cardamom pods — just enough to crack them open.
- Combine all ingredients in a clean glass jar. Seal and shake gently.
- Store away from heat and light. The blend improves with a few days rest as flavours meld.
Brewing a Cup
- Combine 1 cup water and 1 cup whole milk in a saucepan.
- Add 1 heaped teaspoon of the chai blend.
- Bring to a gentle boil, reduce heat, and simmer for 3 to 4 minutes.
- Sweeten with sugar or jaggery to taste. Strain and serve immediately.
Variations
Try oat milk for a dairy-free version. For a cold brew version, steep 2 tbsp in 500 ml cold water overnight, then strain over ice and add cold milk.
